These chewy, buttery, ginger-spiced cookies with a bright citrus glaze are a perfect Fall treat. These little beauties are easy to make and perfect to take to a party or share with a neighbor. These have been a family favorite for the last few years. Click here to see how I make them. Enjoy!
Preheat oven to 350°F.
In a medium bowl, whisk together flour, soda, cinnamon, cloves, ginger and
salt. Set aside. Cream together butter and sugar until light and
fluffy. Add in the eggs, vanilla, and molasses and mix until combined.
Gradually add in the dry ingredient mixture and beat until combined. Using a cookie scoop, drop dough onto a sheet pan and bake for 11-13 minutes or until cookies are just barely starting to brown.
Remove from the oven and let the cookies rest on the pan for a few minutes before transferring to a rack to cool completely.
If you really want to, you could stop here and just enjoy the cookies just as they are. They are so flavorful and can stand on their own, however, the glaze really takes them to the next level. Are you intimidated by the prospect of glazing a whole batch of cookies? Don't be! The glazing process only takes about 10 minutes.
To make the glaze, combine powdered sugar, orange juice, lemon juice, and salt in a deep and somewhat narrow mixing bowl. Whisk until smooth. The deep, narrow bowl will make it easier to dip the cookies in the glaze (especially the last few as you will start to run low on glaze). Dip the tops on the cookies into the glaze and transfer back onto the rack to dry. The glaze will run off the side of the cookie, but most of it should sit on top of the cookie. If the glaze seems too thick, add a teaspoon or of orang juice to thin it out. If it seems too thin, add a couple of tablespoons of powdered sugar. Tip:To avoid having a counter top covered in glaze drippings, place a cookie sheet under the wire rack.
The glaze will dry hard in about 45 minutes, making it possible to stack the cookies on a plate and take them to a party.
And that's it! Easy and delicious! Scroll down for full recipe.
